Besan Ki Barfi

**Haritash Gau A2 Ghee Besan Ki Barfi**

**Ingredients:**

- 2 cups chickpea flour (besan)
- 1 cup Haritash Gau A2 ghee
- 1 cup sugar
- 1/2 cup milk
- 1/2 teaspoon cardamom powder
- Chopped almonds and pistachios for garnishing

**Instructions:**

1. **Roast the Chickpea Flour:**
   - Heat 1/2 cup of Haritash Gau A2 ghee in a heavy-bottomed pan or kadai.
   - Add chickpea flour (besan) to the ghee and roast it on low heat, stirring continuously to avoid burning. Roast until it turns golden brown and aromatic. This may take around 10-15 minutes.

2. **Prepare Sugar Syrup:**
   - In a separate pan, heat sugar and milk together to make a syrup. Stir until the sugar dissolves completely.

3. **Combine the Mixtures:**
   - Once the besan is roasted, pour the sugar syrup into the roasted besan gradually while stirring continuously to avoid lumps.

4. **Cook the Mixture:**
   - Cook the mixture on low heat, stirring continuously, until it thickens and starts leaving the sides of the pan. This may take around 10-15 minutes.

5. **Add Cardamom Powder and Ghee:**
   - Add cardamom powder and the remaining Haritash Gau A2 ghee to the mixture. Mix well until the ghee is fully incorporated.

6. **Set in a Tray:**
   - Grease a tray with ghee and transfer the mixture into it. Spread it evenly using a spatula.

7. **Garnish and Cool:**
   - Sprinkle chopped almonds and pistachios over the mixture and gently press them in. Allow the mixture to cool and set for at least an hour.

8. **Cut and Serve:**
   - Once the mixture is set, cut it into diamond-shaped or square pieces using a sharp knife.
